1/4 cup butter 2 T. soy flour 1/2 cup chicken broth 1/2 cup heavy cream 1/3 cup sherry salt black pepper 2 pkgs frozen broccoli -- cooked about 50% 4 chicken breast halves without skin -- cubed 1/4 cup Parmesan cheese Directions: Melt butter. Mix in soy flour. Add chicken broth. Bring to a boil, stirring, and cook until thick. Remove from heat and add cream, sherry, salt, and pepper. Drain cooked broccoli and place in baking dish. Pour half of the sherry sauce over the broccoli. Arrange slices of chicken on top. Pour remaining sauce over chicken and sprinkle with cheese. Bake at 350 degrees for 20-30 minutes.
