2 10 oz. pkg. frozen broccoli 2 C sliced cooked chicken or 3 breasts, cooked and boned 3/4 C mayonnaise 1 TSP lemon juice 1 10 1/2 oz. cans of condensed cream of chicken or mushroom soup. (substitute chicken or mushrooms cooked in chicken bouillon then add cream with a little sour cream to thicken). 1/2 C cheese (american or muenster) 1 C pork rind crumbs 1 TSP Melted butter (optional with pork rind crumbs) Cook broccoli until tender; drain. Arrange stalks in greased 12 X 71/2 X 2-inch baking dish. Lay chicken on top. Combine next 3 ingredients and pour over chicken. Sprinkle with cheese. Combine crumbs and butter; sprinkle over all. Bake at 350 degrees about 35 minutes until heated. Serves about 6-8.
