Broccoli & Bacon Salad

2	cups	broccoli florets
8	slices	bacon
1	cup	sweet white onion, sliced
2	T.	butter
2/3	cup	olive oil
3	T.	vinegar

Directions:

1. Cook broccoli in medium pot of boiling salted water
until crisp-tender, about 4 minutes. Drain well.

2. Cook bacon in heavy large skillet over medium heat
until brown and crisp. Transfer bacon to paper towels
and drain. Crumble bacon.

3. In a clean frying pan, saute the onions in butter
until soft.

3. Whisk oil and vinegar in medium bowl to blend. Mix in
onion. Season to taste with salt and pepper.

4. Combine broccoli, bacon and onion in large bowl. Toss
with enough dressing to coat.
