Cauliflower Pancakes (Latkes)

1		small head cauliflower, cooked, drained and mashed
1		egg, slightly beaten
1/2		small onion, grated
		pepper to taste
2-4	T	soy flour

In a bowl, combine all ingredients and mix well.

In aheavy skillet, heat a few tablespoons of oil. Drop spoonfuls of the
cauliflower mixture into the hot oil. Cook pancakes on each side until
crisp and browned. 

Serve hot with sour cream garnish.
