Zucchini Fritters

  
2		medium-size zucchini		(carb = 11.37g, 4.7g fiber)
1		egg, lightly beaten		(carb = .61g)
1	Tbsp	soy flour			(carb = 2.38g, 1.09g fiber) 
1	Tbsp	yellow cornmeal			(carb = 6.3g, .33g fiber)
3		scallions, white and green	(carb = 3.3g, 1.17g fiber)
		parts, finely chopped 
1	tsp	chopped fresh ginger		(carb = .3g, .04g fiber)
2	cloves	garlic, peeled and 		(carb = 1.98g, .13g fiber)
		very thinly sliced 
		coarsely ground salt and pepper	
		vegetable oil 
  
In a deep pot, heat one inch of oil over a medium high flame.
Julienne the zucchini in a food processor and set aside.

In a bowl, blend egg with flour and cornmeal until smooth.

Fold in zucchini, scallion, ginger and garlic.  Season with 
salt and pepper.

Drop mixture by the forkful into oil.  Let cook for about four 
minutes on each side, or until crisp.

With a slotted spoon, transfer cooked fritters to a stack of 
paper towels to drain. Serve immediately.
  
Makes about 16 Fritters.
Serves 4. (carb for entire recipe is 27.6g, fiber is 8.02g)
per serving: 6.9g carb of which 2g is fiber
